Carrot Cake



This is my favorite carrot cake recipe. I do not remember where I got it from but it is very easy to make and so moist. Enjoy!

Carrot Cake

2 cups flour
2 cups sugar
2 tsp baking soda
1 tsp ground cinnamon
1 tsp salt
3 eggs
3 tsp vanilla extract
1-1/2 cups vegetable oil
2 cups grated carrots
1 cup chopped walnuts
1 cup crushed pineapple, drained
1/2 cup raisins
3-1/2 oz shredded coconut

Frosting
4 T butter, softened
3 oz. cream cheese, softened
1/8 tsp salt
2 cups powdered sugar
1 tsp grated orange peel
4 T 2% milk

Preheat oven to 375 degrees. Grease and flour a 13x9x2 inch baking pan.

Combine flour, sugar, baking soda, cinnamon and salt. Add eggs, vanilla, oil, carrots, walnuts, pineapple, raisins and coconut. Pout into 13x9x2 inch baking pan.

Bake for about 40-50 minutes or until toothpick comes out clean when inserted in the center. Remove from oven and let cool.

In medium bowl beat butter, milk, orange peel and cream cheese until smooth. Gradually add powdered sugar. Beat until smooth. Add frosting to cake.

Insecticide Spray

I am still making lotions and potions with all of the essential oils I bought. The insect repellent (blog post 7/1/13) worked for about fifteen minutes before the mosquitoes decided the spray tasted like a marinade and NOT a repellent! The deodorant (blog post 7/3/13) worked but I would not recommend traveling with it. It was a melted mess when I arrived at our destination. I will make more and use it only in my home. My next experiment is a homemade insecticide spray. I adapted this one so my husband can use it on his garden. Insecticide Spray   1/2 head of garlic (you do not need to peel them) 1/2 T of pepper flakes 1/2 cup water   Process in a blender until smooth then pout mixture through a sieve to remove chunks of garlic or pepper flakes. This is your "base."   Pour your base mixture into a spray bottle. Add 4 cups of water and 1 teaspoon of Jojoba oil. Screw on top and shake.
