Pound Cake

My Mom loves to cook. In my family and old neighborhood she is known for her pound cakes. She has made every flavor and type of pound cake you can imagine from a traditional to Red Velvet to German chocolate. Eventually, I will post all the recipes my Mom shared with her children. The first pound cake recipe I'm posting is the traditional pound cake. It has a pound of sugar, butter, eggs and flour. My Mom found this recipe from CHARLESTON RECEIPTS which was first printed in 1950.



Old Fashion Pound Cake

1 pound of granulated sugar
1 pound of butter
10 eggs separated
1 pound of flour
1/2 tsp mace
1/2 tsp vanilla
1 tsp lemon extract
1 tsp almond extract
1 tsp baking powder

Preheat oven to 325 degrees. Cream butter, gradually add sugar and continue beating. Add egg yolks and beat until thick and lemon colored. Sift flour and baking powder and gradually add to batter. Then add mace and extracts. Beat egg whites until stiff, then fold into batter. Now beat batter for 5 minutes. Put into well greased and floured Bundt pan. Bake for atleast one hour until brown and toothpick comes out clean.

Making Matzo Ball soup from a box a little more special!! Ingredients: *Matzo Ball and Soup Mix (I buy Manischewitz brand) 2 celery stalks sliced thin 2 carrots peeled and sliced thin 1/2 sweet onion diced 2 garlic cloves chopped (optional) 2 T olive oil or vegetable oil 1 T unsalted butter 10 cups of water 1 cup small pasta (seashells or elbow macaroni) 1 or 1 and 1/2 cups of diced cooked chicken (you can use rotisserie chicken) 1/4 of a lemon (optional) Making the Matzo Balls: package of matzo ball mix 2 eggs 2 T vegetable oil Follow the package directions to make the Matzo Balls. Making the soup: 1. Make your matzo ball mixture and refrigerate. 2. Saute the vegetables (celery, carrots, onions and garlic) in 2 T of olive oil and 1 T of unsalted butter until soft. Then 3. Add 10 cups of water and soup mix to vegetables. Bring to boil. 4. Make matzo balls and drop into boiling soup. Cover tightly. Reduce heat and simmer for 10 minutes. 5. Add pasta and cook fo...
