Sesame Cucumbers


6 small seedless cucumbers 
1/4 cup sesame oil
1/4 cup rice vinegar kosher salt
1/4 cup sesame seeds
1/4 tsp crushed red pepper
2 scallions chopped

Cut cucumbers into quarters lengthwise then cut in half. Combine oil, vinegar, scallions and a pinch of salt. Whisk. Add cucumbers and refrigerate for an hour.

In mini food processor grind seeds and peppers. Sprinkle on cucumbers before serving.
